  • Preheat oven to 350 degrees.
  • Cream together first 6 ingredients until mixed and smooth.
  • Add next four ingredients individually, mixing between additions.
  • Roll into one inch balls and place on ungreased cookie sheets.
  • Bake 12-15 minutes.
  • Cookies will"puff" and look a bit raw when removed.
  • Once they cool they deflate and are decadently chewy and delicious.

  1. Made for PAC, Spring 2007 ~ These are certainly something a bit different & definitely delicate & fragile! They last no time at all, so there's no problem storing them, at least not around here! I did include golden raisins [I'm NOT a no-raisin kind of guy!], & they went well with the coconut taste, I thought! Thanks for the post!

  3. Very yummy! I used 1/2 cup applesauce & 1/4 cup butter, Splenda & 3/4 cup coconut. I also added 2 tsp cinn. For some reason I had no problem with the cookies being fragile; they were totally intact! Very good cookies; thank you!

I found these to be very tasty, maybe because I added a tablespoon of coconut cream ( not the stuff in the can, but finely chopped coconut I get from Tropical Traditions) Anyhow, I have to agree, let them cool on the sheet, they are very fragile while warm. I followed the recipe exactly with the exception of the 1 tablespoon of Coconut cream. I love this recipe!!

I give this recipe 4 stars cause these cookies DO have a really good taste....but DO NOT try to take them off the cookie sheet til they have cooled off as they are very fragile and will fall apart in an instant while still warm. My first batch was a disaster, but I ate them anyway! I added some vanilla and some chocolate chips and a handful of chopped nuts. All in all, a very good cookie....just don't over bake them and be sure to let them cool off before trying to handle them.
