  • Preheat oven to 350°F.
  • Cream together; butter and brown sugar.
  • Add flour, salt, baking soda, baking powder and rolled oats.
  • Stir in coconut, eggs, vanilla and nuts.
  • Either drop by teaspoonfull or roll into little ping pong-sized balls (for a more uniform/cute look) and place on greased cookie sheet.
  • Bake for 15 minutes.

  3. very nice cookie; although i had to make them into bars as i had no time to do individual batches. followed recipe exactly except i subbed butter for shortening, and did 1c organic cane sugar and 1c brown sugar. they needed to cook a bit longer i am assuming b/c they were in a my casserole dish and when cut into bars and cooled were delicious. very nice texture; not caky and dry; rather chewy and moist and very flavorful. will make these again.
     
  4. These are very nice. I baked mine a little bit longer than suggested and got a crunchy/chewy texture which is fine for me. Great for dunking in a cup of coffee.
     
  5. These cookies ended up being snatched up for breakfast this morning! 3 cups of oats vs. the usual 1 cup made them hearty and chewey, and mentally less sinful. I substituted 1/4 cup white sugar for some of the brown because my bronw sugar is very strong. I put in coconut instead of nuts, and added a few chopped raisins. We were trying to imitate the oatmeal cookes McDonalds just discontinued, and this hearty recipe did the trick :)

I am a 21 year old recent graduate (May 2007) of McGill University (BSc Maj Biology Min Geography). Since 2005 I've worked for a University department as their website maintainer/ graphics designer/ photographer/ general technical go-to girl. In the summer of 2004 I met an Irishman named John while I was backpacking through the UK and Ireland. He moved to Montreal to be with me the following year and we were married December 10th, 2005. We have a two year old polydactyl piebald cat who is about the size of a medium dog, named Theodore. I'm an amateur photographer as well as an amateur chef. I'm looking forward to living somewhere with a small patch of green so I can become an amateur gardener as well, to plant flowers to photograph and veggies to cook!
