Coconut Pancakes

"These were a variation from the user "What's Cooking?" My mom came up with this and it was so delicious and coconutty!"

  • Mix all ingredients together until batter has a smooth consistency with no lumps.
  • Batter should not be too thin or too thick.
  • Pour 1/4 cup batter (or less if you want smaller pancakes) at a time onto a preheated lightly oiled griddle or pan.
  • Cook until golden brown,(lots of air bubbles appear on top of pancake) flipping once.
  • Serve immediately.

Hi I'm Megan I live in Pennsylvania. I'm a pretty young cook. I started in 7th grade and I have gotten so much better in the last few years. I work on weekends as a hostess and bussing tables. They are all cool. I love different cultures and I love middle eastern dance. Those are my true passions. But I am involved in a community service club at my school and I love helping others.
