- 4 lbs sweet potatoes, peeled and chunked
- 1⁄2 cup pecans, chopped
- 1⁄2 cup flaked coconut
- 1⁄3 cup sugar
- 1⁄3 cup brown sugar, packed
- 1⁄4 cup butter, melted
- 1⁄2 teaspoon cinnamon
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon coconut extract
- 1⁄2 teaspoon vanilla extract
directions
- Spray the inside of a slow cooker crock with cooking spray.
- Place the sweet potato chunks in the slow cooker.
- Combine pecans, coconut, sugar, brown sugar, butter, cinnamon and salt.
- Sprinkle over potatoes.
- Cover and cook on low 4 hoursor until potatoes are tender.
- Stir in extracts.

This was a hit at the company Thanksgiving pot-luck! No one had ever seen sweet potato "casserole" done in a crock pot and many asked for the recipe. Careful with the extracts, 1/2 t is the absolute max for both, and trust the crock pot to cook the sweet potatoes (don't panic and turn the temp up to high). Thanks for a wonderful pot luck dish!
