Coconut Pecan Sweet Potatoes

  • Spray the inside of a slow cooker crock with cooking spray.
  • Place the sweet potato chunks in the slow cooker.
  • Combine pecans, coconut, sugar, brown sugar, butter, cinnamon and salt.
  • Sprinkle over potatoes.
  • Cover and cook on low 4 hoursor until potatoes are tender.
  • Stir in extracts.

  1. This was a hit at the company Thanksgiving pot-luck! No one had ever seen sweet potato "casserole" done in a crock pot and many asked for the recipe. Careful with the extracts, 1/2 t is the absolute max for both, and trust the crock pot to cook the sweet potatoes (don't panic and turn the temp up to high). Thanks for a wonderful pot luck dish!
