- 1 cup jasmine rice
- 1 1⁄2 cups water
- 1 cup unsweetened coconut milk, well shaken
- 2 teaspoons grated lime zest
- 1 tablespoon lime juice
- 1 teaspoon kosher salt
- 1⁄4 teaspoon fresh ground black pepper
directions
- Combine all of the ingredients in a medium saucepan over high heat. Cover and bring to a boil. Reduce heat to low and simmer for 20 minutes, or until all of the liquid is absorbed.
