- 1 (14 ounce) can light coconut milk (not sweetened)
- 1 cup long grain rice
directions
- Rinse rice.
- Bring rice and milk to a low boil. Put lid on and simmer for 20 minutes or until done. Check to make sure it doesn't burn - we had to add a little extra water to ours.
