  1. Place sugar, cream and butter into a heavy 3-quart saucepan; cook over medium heat to 238 degrees F stirring occasionally; remove from heat, allow mixture to stand (WITHOUT STIRRING) for 10 minutes.
  2. Add in chopped white chocolate, mix until completely melted.
  3. Quickly stir in coconut, pecans and vanilla.
  4. Pour mixture into a buttered 8-inch square pan.
  5. Cool, then cut into squares.
