  1. Scrub potatoes throughly, and rub outside with vegetable oil; bake at 375F for 1 hour or until tender. Let cool to touch.
  2. Slice skin away from the top of each potato. Carefully scoop out inside pulp, leaving the shells intact.
  3. Combine pulp, sugar, milk, orange juice, and salt; beat until smooth. Stir in orange zest and 1/2 cup coconut.
  4. Spoon potato mixture into shells; sprinkle with remaining coconut. Bake at 350F for 20 minutes or until throughly heated.
