"This was one of the first recipes I made when I started culinary school. I didn't grow up eating much fish, but this recipe made me want to eat it all the time."

directions

• To make tomato compote:

• Heat oil in heavy medium skillet over medium heat. Add tomatoes and sugar. Stir until tomatoes are very tender and mixture is thick, about 15 minutes. Season with salt and pepper.
• To make fish:

• Melt 2 Tbsp butter in heavy skillet over med-high heat. Add mushrooms and chopped shallots. Saute until liquid evaporates and mushrooms begin to brown, about 8 minutes. Cool completely.
• Using electric mixer, beat 1 cup butter in large bowl until light. Beat in egg, parsley, half of thyme, 1 tsp salt and 1/2 tsp pepper. Mix in breadcrumbs and mushroom mixture.
• Preheat oven to 450°F Sprinkle garlic, shallots and remaining thyme over bottom of pan. Add fish stock, then fish. Sprinkle fish with salt and pepper. Spoon breadcrumbs over fish, covering tops completely and press down.
• Bake fish until opaque in center, about 15 minutes. Transfer to broiler. Broil until topping is crisp, about 1 minute.
• Using slotted spoon, transfer fish to plate. Transfer cooking liquid to another skillet. Bring to simmer. Add remaining butter and whisk until melted and well blended. Season sauce with salt and pepper. Spoon sauce around fish. Spoon dollop of tomato compote alongside and serve immediately.

1. I am commenting on this and not rating, because I didn't follow the recipe exactly because of time constraints. I used grouper instead of cod and it required cooking for 25 minutes, so I covered the fish with foil after the topping browned. I also didn't add the extra butter to finish the sauce after it cooked....I think I would finish this step next time. I also used canned tomatoes and cooked it down. Overall, it was a great tasting recipe!

I went to culinary school for a year and a half, but did not finish due to the arrival of my daughter. I love baking and cooking, but with a 3 1/2 year old and a one year old, I keep it very simple!!! Recipezaar is definitely my go to place for recipes...both elaborate and simple. I work as an office manager in a nursing home. Its a great job, despite having to deal with losses all time. I guess its helped me be a more compassionate person towards other people in their losses though, which is a good thing. Besides spending time with my family, I love to read, play sudoku, and do my bible study.
