Coffee Nut Bars

"My mother gave me this recipe a long time ago. She has been making it forever. I believe she told me she got it off the back of a coffee jar. :) I usually double it and put in 9x9 to make thicker bars (longer cooking time so be sure to check it)."

  • Dissolve coffee in hot water; set aside. Put butter and sugars in mixing bowl and combine. Stir in egg and vanilla.
  • Sift in flour, baking powder, salt, and baking soda alternately with coffee.
  • Spread evenly into 8x8 pan. Bake at 350 for 25-30 minutes or until done.
  • Cool in pan then dust with powdered sugar. (I like to cover my pans not long after coming out of oven to keep the moisture in for chewiness). :).

  2. So light and yet dense. I know that makes no sense but they were cakey yet the flavour was light. You didn't mention when to add the nuts so I just sprinkled my pecans on top. The batter seemed too little to put into an 8x8 pan so I made cupcake brownies with them. Just a touch too much batter for 6 cupcakes but didn't want to dirty a pan for just 1 :) The center sank in the cupcakes, but we didn't care!
     
  3. These bars are a wonderful treat! I couldn't decide between pecans and chocolate chips so I used both! My bars came out nice and moist, almost chewy, and the powdered sugar was a perfect topping. Thanks for sharing this recipe!
     
  4. YUMMY! I made this with decaf instant coffee, whole wheat flour, added 1/2 tsp cinnamon, subbed Splenda for the sugar and 1/4 cup Splenda brown sugar blend. I omitted the pecans and added 1/2 cup of semi-sweet chocolate chips. I baked it about 22 minutes in an ungreased glass 8x8. It has a wonderful coffee flavor which is very nice with the cinnamon and chocolate and mine has a delightful crisp texture I enjoy. Made for 1-2-3 hit wonders.
     
  5. I made these yesterday and they were a big hit. My mom couldn't believe that these bars didn't have any chocolate in them. :) I used Folgers decaf coffee and since I didn't have an 8x8 pan, I used a round cake pan instead. It actually turned out fantastic in the cake pan because every piece came out with a wonderful crust, just like a pizza!
