  1. Preheat oven to 325 degrees.
  2. Stir the instant coffee and vanilla in a small bowl until well blended; set aside.
  3. Mix the flour, salt and cinnamon in a medium bowl; set aside.
  4. Beat the butter in a large bowl with an electric mixer set at medium speed until smooth and creamy.
  5. Gradually add the powdered sugar, beating until well blended.
  6. Beat in coffee mixture, then flour mixture.
  7. Beat on low speed until blended.
  8. Press firmly into a 13x9 inch pan. Pierce the entire dough at 1-inch intervals with a fork.
  9. Bake for 30-35 minutes, or until the edges are slightly browned.
  10. Let cool for 5 minutes, then cut into bars while warm.
