Coke Salad

"This is adapted from the 1970 Congressional Club Cook Book. I was never a fan of jello salads growing up until I tasted this amazing creation at my first Thanksgiving with my in-laws. Always a treat!"

  • 1 (15 1/4 ounce) can dark sweet pitted cherries (cut in half)
  • 1 (20 ounce) can crushed pineapple in juice
  • 1 (3 ounce) package cherry jell-o gelatin (dark cherry works well, too)
  • 1 (3 ounce) package strawberry Jell-O gelatin dessert (raspberry works well, too)
  • 1 (12 ounce) can Coke (Coke Zero works well, too)
  • 1 (8 ounce) package cream cheese (use fat-free to reduce fat)
  • 12 cup chopped pecans

directions

  • Drain juice from cherries and pineapple and bring juice to boil.
  • Pour juice over Jello.
  • Let cool a few minutes and then add Coke.
  • Add cherries, pineapple, cream cheese and pecans.
  • Pour mixture into mold and let congeal (8-24 hours).
