  • Preheat oven to 350 degrees F.
  • Line two twelve cup muffin tins with cupcake lines.
  • In a large bowl, using a wire whisk, stir together flour, white or brown sugar, cocoa, soda, powder, and salt.
  • Stir in all wet ingredients- vanilla, eggs, oil, and coffee or cola, and buttermilk, to dry mixture, using a large wire whisk, or beat on electric mixer on medium speed for two minutes.
  • Pour into prepared pan.
  • Batter will be thin.
  • Bake for 20-24 minutes or until cupcakes test done.
  • (Cupcakes should be slightly puffed up in centre and spring back when touched).
  • Freeze frosted or unfrosted.
  • Makes 18 to 24 (medium).
  • Recipe can be doubled or tripled.

  1. An easy mix to put together, I did put the mix into a large jug and then poured it into the paper patty pans. I also used the coffee option. They were cooked to perfection in 18 minutes at 175C fan forced oven. The DS took them to his music recreation group were they were thoroughly enjoyed.   2. Delicious and easy! And i even messed up - I mixed up the baking soda w/the powder and it turned out fine. I used coffee and then 1/2c milk 1/2 c sour cream in place of the yogurt as suggested by another reviewer. I can't BELIEVE how fluffy and soft they are! I used a chocolate buttercream frosting. Fabulous! Just what I was craving.

  4. I made these with the following options: I used 1 cup of white sugar and 1 cup of brown sugar, I used coke zero for the cola and chocolate buttermilk. They turned out fantastic. My first batch I filled 2/3 full and they were overflowing when I took them out. I reduced the batter amount (therefore I got more cupcakes) and the bake time. But the end result was fantastic. I very light, moist cupcake. I do a lot of baking and this is my new favorite chocolate cupcake recipe!
     
  5. I made these with the coffee instead of cola, these make a lovely dark rich tasting chocolate cake. They don't stay as fresh as as I would have expected though..I thought they would stay moist for quite a few days but mine were a little dry after just 2 days, best eaten fresh.

  4. Excellent, easy recipe. I used Coke, and substituted milk mixed with 1 tbsp lemon juice for the buttermilk (since I did not have any buttermilk on hand). Turned out great...!
     
  5. Pretty good. I subbed the sugar out for 1&3/4C splenda, added a 1/4tsp of molassas, replaced the buttermilk with 1% milk+1tbs of lemon juice because I'm trying to cut sugar and had no buttermilk. Oh- used diet coke too in place of the soda. All in all pretty good. Lovely dark color, chocolaty taste. Were okay by themselves, wonderful with icing. I WILL be making again- hopefully the normal way, if I'm ever off my diet, LOL.
