Directions

  1. Drain black-eyed peas. Rinse well with cold water and drain.
  2. Add celery, onion to peas.
  3. Whisk together oil, vinegar, mayonnaise, salt and cayenne pepper.
  4. Pour over black-eyed peas.
  5. Stir gently.
  6. Refridgerate several hours or overnight.
  7. At serving time, gently stir in tomatoes.
