  • Gently toss fish and vegetables together.
  • In a small bowl whisk together vinegar, garlic, parsley, salt and pepper, slowly incorporate oil while continuing to whisk.
  • Pour vinaigrette over salad ingredients. Toss gently.
  • Serve on a bed of spinach and top with egg slices.
