Colombian Arepas

"This is a quick way to prepare arepas. Not exactly the taste of the traditional arepa, but quite close enough. Arepas can also be topped with tuna salad, chicken, ham and cheese, sautéed tomatoes and onions, and beef."

  • Bring water to a boil and add it to the corn meal, stirring thoroughly. Add the butter and salt to taste.
  • Form into several flat tortillas (4 to 6 inches diameter, 1/8 inch thick) and roast over a low charcoal fire or on a wire rack over the burner of your stove.
  • Serve hot with butter and fresh white cheese.

  1. This is very similar to a recipe I make. However, I add a little shredded cheese to the mixture (queso blanco) and I don't boil the water first, I just dump in in together. Also, soften the butter a bit before you put it in. I use the corn meal in a yellow package made by P.A.N. I spray Pam on a skillet and cook them a few minutes on each side until they are hard and slightly golden brown. I then place a slice of shredded queso blanco and top. Serve just that way, or add jelly, or add some green Colombian aji sauce. YUM!!!
     
  2. This is the same recipe I use except I fry them in sm amnt of oil and sometimes add the white "frying cheese" Blanco something cause it doesn't stick...yummy. I can't wait to try them as suggested, grilled, now those will have to be awesome. Thanks, Witch Doctor.

Lots of interesting stuff out there people eat! Love to try out those recipes I have collected now that I have the time.
