Directions

  1. Prepare pasta according to package directions.
  2. Add oil, vinegar, basil, parmesan cheese, salt, and pepper to the container of an electric blender.
  3. Process until smooth.
  4. Drain and rinse cooked pasta; place in a big bowl.
  5. Add the peppers, tomato, olives, and onion.
  6. Pour in dressing; toss to coat.
  7. Add mozzarella cheese and toss to mix well.
  8. Add additional salt and pepper if desired.
