  1. Preheat oven to 350°F
  2. Grease and flour a 12-cup bundt pan.
  3. Mix apples, 5 tbs sugar and ground cinnamon in a large bowl.
  4. Combine 2 1/2 cups sugar, eggs, vegetable oil, orange juice, orange peel and vanilla extract in another large bowl.
  5. Whisk to blend.
  6. Sieve flour and baking powder.
  7. Add to egg mixture.
  8. Spoon 1 1/2 cups batter into prepared bundt pan.
  9. Top with half of apple mixture.
  10. Cover with 1 1/2 cups batter.
  11. Top with remaining apples.
  12. Cover with remaining batter
  13. Bake for about 1 hour 30 minutes.
  14. Cool cake in pan on wire rack for 15 minutes.
