"Excellent traditional pot roast. This is very similar to the Best Recipe American Classics cookbook, but it does not come from it. Maybe they copied it from me?"

  • Preheat oven to 300 degrees.
  • Dry roast and sprinkle with salt and pepper.
  • Heat oil in dutch oven.
  • Brown roast on all sides, reducing heat if fat begins to smoke; 8 to 10 minutes.
  • Transfer roast to plate. Reduce heat.
  • Saute vegetables until they begin to brown, 6 to 8 minutes.
  • Add garlic and sugar and cook until fragrant, about 30 seconds.
  • Add broth, thyme & return roast to pan.
  • Bake 3 1/2 to 4 hours, turning every thirty minutes or so.
  • Remove roast, skim fat and discard thyme.
  • Add wine and reduce to about 1 1/2°C.
  • Can add potatoes, carrots or other root vegetables about 45 minutes before finishing.
