Composed Greek Salad
"This came from an old Bon Appetit, with a beautiful picture. It is easily assembled and quite dramatic looking, especially if arranged on one of the lovely, colorful Greek platters. I frequently add canned dolmatas, if the company would allow."

ingredients
- 1 (12 ounce) jar marinated artichoke hearts, quartered and drained
- 2 large cucumbers, peeled, halved lengthwise, seeded, sliced crosswise
- 2 large tomatoes, cut in wedges
- 1 yellow pepper, sliced in rings
- 1 sweet onion, sliced in rings
- 20 kalamata olives
- 1 cup feta cheese, crumbled

VINAIGRETTE
- 10 tablespoons extra virgin olive oil
- 4 1⁄2 tablespoons white wine vinegar
- 1 tablespoon dried oregano
- 2 teaspoons lemon peel, grated
- 2 teaspoons lemon juice
directions
- Arrange artichokes, cucumbers, tomatoes and olives in separate sections of platter.
- Top with thin slices of bell pepper and onion.
- Whisk oil, vinegar, oregano, lemon juice, and lemon peel in small bowl to blend.
- Season with salt and pepper to taste.
- Pour dressing evenly over salad.
- Sprinkle with Feta cheese.
- Serve.

I loved this. My platter consisted of cucumbers, red peppers, green peppers, cherry tomatoes, black olives, artichokes, red onion. The dressing could've been cut in half. -
We love Greek salads, enjoying new versions of this lovely salad had me give this one a try. Makes for a GREAT salad and has been added to my favorites collection.Other than adding a touch of sugar (a personal preference on our part) loved every bite! Looked awesome on a white serving platter - made for great presentation as well as great taste. Thank you Janey for another of your recipes that taste as good as they look. -
This was an absolutely delicious Greek salad! I followed the recipe exactly with the addition of adding cooked, peeled shrimp. Even the man of the house, who can be a little negative when presented with such a healthy meal, was thoroughly satisfied. Thanks for posting NurseJaney!! -
This was delicious! I followed the instructions completely but added a pinch of sugar to the dressing and topped with some cooked shrimp that I had marinating a little in the dressing before tossing all together. DH really enjoyed this salad on a warm day so this will go into our rotation. Thank you for posting. Made for 2013 <br/>Aussie Recipe Swap #80. -
I made this for the Jan 2011 recipe tag...this is one delicious salad. I have tomatoes growing in the garden ( it is warm here in south florida!) and i used those...yummy dressing and easy to prepare. Thanks!

We sincerely enjoyed this tonight. I did leave off the yellow pepper, as it fell out of the grocery bag and was rolling on the floor boards in my truck LOL. Also used green onion instead of red onion. So good. Thanks for sharing!!! -
Everything you could have wanted from a Greek salad! Not sure I composed it as prettily as Bon Appetit, but it was pretty nevertheless. I halved this, used less oil and non-fat feta, and substituted the white wine vinegar with half balsamic and half red wine vinegar. I'm sure the white wine vinegar would have been fine, but I was just using what I had on hand. I loved the authentic taste of the viniagrette, and I have a penchant at times for a no-lettuce salad. <p>This photo of DH and me was taken on our 50th anniversary, 12/27/08. Both DDs and 2 DGC celebrated with us. <br /><br />DH and I live about 40 miles north of Baltimore, in what WAS rural 40 years ago. We are empty-nesters. Have 2 adult daughters, 2 great SIL, and 3 grandchildren --1 is 22, and 16 year old twins. In September of 2011, we were presented with our first GREAT-grandson ! They all live in PA. and are VERY busy people ! <br /><br />I retired from MANY facets of nursing 12 years ago, and LOVE being in charge of myself ! <br /><br />We had a 4-couple Gourmet Group for so many years, that we ran out of new things and themes. Now we meet at restaurants, to avoid trashing the kitchen as well as the budget. We started with 7 course meals! None of us can DO that anymore !! <br />We have been VERY fortunate to be able to travel more than we ever dreamed !! Have B&B'd in Great Britain many times; visited Italy, Greece, France, Australia, New Zealand, Germany, Switzerland, and Iceland (in February !) We would far rather stay in B&B, or self-catering apartment or dwelling, than be on a tour. Our trip in '09, was to 2 small towns in Sicily --Sant'Alfio, on the slope of Mount Etna, in a 15th century, converted winery --and a week on the north coast near Cefalu. Very few spoke English, but everyone was helpful and we managed to communicate, and had a wonderful time ! (Photos in Gallery on website below !) We returned there in Sept. '11, for a 2 week vinyard tour with a small group, led by our local wine store owner - whose family is still in Sicily ! <br /><br />DH is my photographer - (and a website designer) but he insists on set-up time as well as a hot meal ! I should plan ahead for serving appeal, so he can get the best shot. <br /><br />I am now a SIX year survivor of colon cancer, as of 5/11, and four year of thyroid. Angels on my shoulder found both lesions before I even had symptoms !
