Condensed Cream of Mushroom Soup Replacement - Substitute

"I swiped this from the Food networks low carb and loving it, green bean casserole recipe. Isolating the parts that recreate the Consensed cream of mushroom soup part and fiddled a bit with it."

  • Heat the oil in a large pan over medium-high heat.
  • Add onion, mushrooms, salt, garlic, and pepper and cook, stirring, about 2 minutes.
  • Add the chicken broth and thyme and cook until almost all the liquid is evaporated, about 3 to 4 minutes.
  • Add the sour cream, and toss to combine.

  1. Can you clarify the serving size in the nutritional information? It says serving size is 1, but then it serves 8. So the size is 1....what? Cup? Or did you mean the whole thing makes 1 serving because it is intended to insert into a recipe as a substitute for the canned version?

  1. Awesome! I'm looking for healthier alternatives so I thought I'd try this in place of the canned soup. As usual, anything you make from scratch tastes 100% better. Half way through cooking the mushrooms & onions, I noticed a pleasing fragrance that filled the kitchen. I said to my husband, "This smells SO good!" It took me about 15 minutes to reduce the liquid, however. When the liquid was reduced, I then pureed it in the food processor so it resembled the canned stuff.

  4. I used it in recipe #107840 and it worked fine. Great substitute that reduces down well for when you don't need the full can of soup.
     
  5. This worked out really well. I used it instead of Cream of Mushroom soup in green bean casserole, and it worked nicely. I used canned sliced mushrooms, because I didn't want to shock the people who like the original TOO much. Most of them enjoyed it, too. Thanks for sharing!

I love to cook, to feed people and to experiment. Unfortunately I have a very limited audience, so most of my creations are reserved for me alone. My BF is a sort of picky eater and all of my favorites he dislikes, so I'm learning how to get around lots of ingredients. Like mushrooms (so sad), tomatoes and onions... who cooks without onions? In this one way, it's almost a good thing that our schedules allow for only 3 meals a weeks together :-)
