Continental Cheesecake (Easy Microwave Fix)

"When I saw the pic of this lovely dessert in *Microwave Cooking* by Lorna Rhodes, I could hardly believe it had been created w/a microwave cooking method & such a simple decorating effort. It was 1 of only a few recipes in the cookbook that included an intro. Per the intro, “This cake can be decorated w/fruits of your choice to create presentational themes. Serve thin slices as it is very rich.” See Note that follows the prep for details. Also pls note this is another recipe that uses 2 Power Settings - HIGH & DEFROST. *Enjoy* !"

  • FOR CHEESECAKE: Line base & sides of a 1 1/2 qt microwave loaf dish w/oiled greaseproof paper.
  • Beat butter, sugar & honey. Gradually add beaten eggs. Beat in cheese, lemon rind & juice (or lime if using), sour cream, cornstarch & vanilla extract. Mix till smooth & fold in the chopped sultanas.
  • Spoon mixture into prepared dish, cover w/greaseproof paper & cook on DEFROST for 20 minutes. Remove cover.
  • FOR BASE: Place butter & syrup in a bowl & microwave on HIGH for 1 minute. Stir in the crushed cookie crumbs. Spoon cookie mixture on top of cheesecake & press down slightly. Allow to fully cool & then refrigerate till needed.
  • TO SERVE: Carefully invert the cheesecake onto a chilled serving plate & remove the greaseproof paper. Decorate w/whipped cream + fruit per note below, slice thinly & serve immediately.
  • NOTE: The pic showed sliced fruit layered in rows on both sides of the cheesecake & a row of whipped cream in the centre. Use alternating slices of strawberries & kiwi for a X-Mas theme, strawberries for a Valentine theme, kiwi for a St. Pat’s Day theme or rows of strawberries, bananas & blueberries for a 4th of July theme. I will likely use a canned spray cream right b4 serving for its ease & do without the need to use & whip the double cream. I admit I'm lazy, but I also don't think this needs the added richness, calories & fat of double cream :-).
