Cooking Light Easy Ravioli Bake

"Convenience of store bought ravioli with a quick homemade sauce. Would also be delicious with some spinach and ricotta added. Use whatever kind of ravioli you wish."

  • Cook pasta according to package. Drain well.
  • Preheat oven to 400°F.
  • Heat a dutch oven coated with cooking spray over med-high. Add onion, bell pepper, oregano and garlic; saute 5 minutes or til veggies are tender. Add tomato paste and next 6 ingredients, stirring well to combine; bring to a boil. Reduce heat and simmer 20 minutes, stirring often.
  • Remove from heat. Add pasta to sauce, tossing well to combine. Spoon pasta into an 8-inch square dish coated with cooking spray and sprinkle evenly with cheese. Bake at 400°F for 30 minutes or til cheese melts and begins to brown.

I am a former retail management slave who is now a stay at home mom who absolutely loves her job. I have an eight year old, a two year old and a nine month old who all bring their own kind of joy to my life. My favorite thing in the world is to cook. We have a real, from scratch family dinner almost every night. Please don't be offended if I somewhat change a recipe in my review. I look at recipes sort of as guidelines, and alter them according to inspiration. I've received alot of helpful advice from reviews, that's why I share what I've done differently. With my little ones I'm pretty busy, but I LOVE this site and plan on being even more active as they get older.
