Cool Kitchen Chop in a Crock Pot Dinner

"This recipe is great for summer or winter. It is an all in one dinner that takes minutes to prepare. Add your own favorite vegetables or stay with the ones in the recipe. In summer you may wish to put your crock pot outside on the patio while it cooks. In Winter let the aromas fill your house. It is wonderful. Serve with crusty bread to sop up the sauce. Enjoy! If you wish cook this on high for a total of 3 1/2 hours."

  • Mix together the broth, BBQ sauce & Dijon mustard.
  • Pour a little in the bottom of the crock pot.
  • Place chops in the crock pot.
  • Add remaining ingredients except the snow peas, corn starch and water.
  • Season with salt & pepper.
  • Pour the chicken broth/BBQ sauce over the crock pot contents.
  • Put the lid on, turn to low cook for 6 1/2 hours.
  • Mix cornstarch with water add to crock pot, stir it in .
  • Add snow peas.
  • Continue cooking on high for another 1/2 hour.
  • Serve and enjoy.

  1. YUM!! My husband loved this meal Since I am a vegetarian, I picked out all of the vegetables and those were amazing as well. We will definitely be having these again.
     
  2. I wont rate this as I plan to try this again with a few changes. I think if I can correctly change a couple of things to suit my needs this recipe would rate higher for me. My meat disintegrated into the sauce by the time my veggies were cooked. I ended up with basically shredded pork with bite size pieces mixed in when I tried to remove the chops. Next time I will put the potato and carrots on the bottom of my crockpot. Secondly, I used Sweet Baby Rays BBQ sauce. Too sweet for our tastes in this recipe, although I use it all the time. I did double this so that may have contributed a lot in my issues with this recipe. I also omitted the peas. I will try this one again. It was good just needs some tweeking for me. Thanks for sharing!
     
  3. Excellent! This recipe received a firm 5 star rating at our house. I doubled the pork chops, potatoes, and used 3 regular carrots cut into 3" logs. I left the sauce ingedients and other vegetables as per the recipe. (I didn't use the snow peas as I couldn't find fresh.) This filled a standard crockpot and made more than enough sauce to blanket everything and have some for biscuits. The taste is very flavorful, with a bit of zesty heat and a mild saucy "gravy" after it was thickened. I will definitely be making this again! Thank you for your RSC #10 entry!
     
  4. Great recipe!!! I came home from work and by the end of the evning, ate the whole thing! I like hickory BBQ sauce, so that's what kind I used here.
     
  5. We really enjoyed the dish, doubled for 4 servings. Absolutely no problems. We used just 2 VERY large jalepenos, because the SIL doesn't do spicy. Will add the others next time. My only suggestion is to suggest the flavor of BBQ because that would really change it up. For example, I had on hand, Hickory, Chipotle, and Spicy. I'm not sure I used the best one. I'll have to experiment. I will, though. This will be made frequently throughout fall and winter. Thanks and good luck! I'll post photos when allowed.

On January 10 2010 I will celebrate 9 years of Life with Zaar. I can't imagine being without it! It has become part of my daily routine. I feel very privileged to be one of the hosts on the Photo Forum. Taking photos of my culinary efforts is a full time hobby and I love it. My friends all know what to expect when they come to dinner "Are you finished taking pictures?" or "Did you get a photo of so & so?" I never let them wait too long and the food is NEVER cold! I now have over 6000 photos on Zaar - some fairly good and some definitely not so good. I am happy to say that practice does help. My roots are in Vancouver BC Canada - a very beautiful city that holds many wonderful memories for me. In 1990, I decided that for my retirement years I may want to settle in a smaller community and found a slice of heaven in the North Okanagan B.C. I love living here but every once in a while I miss the bright city lights, the Broadway shows and some of the small wonderful ethnic restaurants that Vancouver abounds in. That is easily resolved. I just take a trip to the coast, visit with friends for a weekend see a show and feast on Dim Sum or other specialty foods. I am getting a bit long in the tooth but was a very adventurous person. I have river rafted Hell's Gate on the Fraser river, been up in a glider over Hawaii (no not a Hang Glider!), gone hot air ballooning in the Napa Valley & the Fraser Valley, driven dune buggies on the dunes in Oregon, Para sailing in Mexico and tried many other adventurous, challenging, fun things. I have yet to try bungee jumping or sky diving. I may do them yet. I love to travel and experience other cultures. Mexco has been a favorite haunt. I have visited that lovely country many many times. Australia is another favorite as is England! In the past 16 months I have taken off 61 pounds and feel wonderful. I am off all medications and all systems are GO! In years I may be 79 but in spirit I am still in my forties. We are only as old as we allow ourselves to feel. Always think positive. Do something a bit challenging every day & always do something silly every day. Be a kid again! Laugh every day - it is internal jogging.
