Cool Summer Veggie Salad

"I actually got this recipe from a friend who is Indian. She said it's a modified traditional Indian salad, but I make it all the time. It's citrusy and cool and great as a picnic dish or an appetizer alternative to regular salad."

  • Chop cilantro, cucumber, onion, pepper.
  • Cut grape tomatoes in half.
  • Combine everything in bowl.
  • Squeeze half the lemon in bowl.
  • Squeeze the whole lime in bowl.
  • Mix everything together.

  1. The really cool thing about this recipe is that it contains no fat at all and is made up of solely vegetables. Perfect for dieters (like me) who are attempting to avoid mayo based salads at barbeques but still want a full plate of food. You can bring it as a side dish to a party and eat as much of it as you like! I added some feta cheese!YUM!
     
  2. Very nice salad for a hot summers day! I omited the red peppers, but used Lots of Grape Tomatoes. I did add a bit of olive oil and 1 Tbs of sugar to the dressing. It was a nice change of pace.I will make this again!
