Corinne's Oatmeal Cookies

"This is my mother's recipe for oatmeal cookies. It is not like any other oatmeal cookie I have had. The cookies are rounded with a light, tasty crust. I believe this was originally from a Heart Association cookbook; it calls for oil instead of butter. It's very versatile and easy to make. It makes a lot of cookies!"

  • Preheat oven to 400 degrees.
  • Mix together the flour, sugar, baking powder, baking soda, salt and cinnamon in a large mixing bowl. Add the oats, raisins and stir together. You can substitute chocolate chips, chopped dates or chopped prunes for all or part of the raisins. Add the oil, eggs and milk and mix until blended.
  • Drop by spoon onto ungreased cookie sheets.
  • Bake 10 to 12 minutes.
