  1. In a saucepan, cook the bacon over medium heat until crisp, about 5 minutes.
  2. Drain the fat from the pan.
  3. Add the onions and garlic and cook, stirring occasionally, until softened, about 5 minutes.
  4. Meanwhile, peel and cube the potatoes.
  5. Add to the pan along with half of the chicken broth and bring to a boil.
  6. Reduce the heat to medium-low, cover and simmer until the potatoes are tender, about 10 minutes.
  7. Using a potato masher or hand blender, mash several times to break up about half of the potatoes.
  8. Add the remaining broth, corn and broccoli.
  9. Simmer until the broccoli is tender, about 6 minutes.
  10. Reduce the heat to low.
  11. Stir in the milk, salt and pepper.
  12. Heat through but do not boil.
  13. Sprinkle each serving with cheese.
