  • Place the broccoli and corn in a large bowl. Add the 1/2 cup crushed crackers, the cheese, whipping cream or half-and-half, egg, the 2 tablespoons butter or margarine, the onion powder, salt, garlic powder, and pepper.
  • Stir to combine the mixture. Spoon the mixture into a 1-1/2-quart round casserole or a 9-inch pie plate.
  • Sprinkle the remaining 1/2 cup crushed crackers evenly over casserole.
  • Drizzle with the remaining 2 tablespoons melted butter or margarine.
  • Bake, uncovered, in a 350°F oven for about 25 minutes or until the edges are bubbly.

  1. I made this over the weekend to go with a pork tenderloin and really enjoyed it. Easy to make and very tasty. I used 2% shredded cheddar and fat free half and half. I also ommited the butter and it was fine. Thanks for the recipe!
     
  2. It was very tasty!! Loved the crackers on top! I guess I expected it to be more cheesy & creamy. Between the egg and the crackers mixed into the Casserole, it had a firm consistency. In place of the Onion powder I added some fresh finely diced onions. I will make it again, however I will play around with the ingredients to make it a little more cheesy & creamy.
     
  3. Have made this recipe for over 20 years, passed down. Most requested side dish for Thanksgiving and potluck dinners. Easy to double up because you will need it if you have a large family or social gathering. No leftovers. Gone. Sometimes I wonder if the dish is licked clean. Ewww! I use half and half, and Ritz crackers. This recipe is rich in taste.

  5. So good, so easy. I didn't have cream or half-and-half, so used skim milk. I expected the finished product to be more liquidy because of this, but it wasn't. Even my broccoli-hating husband had a big scoop of this!

<p>I was born and raised in Connecticut. I love the New England area, I think it is so pretty with the change of the seasons. <br /><br />I work for an ambulance company in their wheelchair division for non-emergency transportation. I just don't have all the time to make all these recipes. I lost my husband in July 2006 and I am not the spring chicken anymore...pretty tired when I get home from work...so it's all quick, quick, quick, for me. <br /><br />I have tried a few....and have been pleased with my results and the new taste sensations. I am trying to initiate a goal of trying at least two new recipes a week.
