Corn and Zucchini Medley

- 4 slices bacon
- 2 cups zucchini, chopped
- 1 1⁄2 cups fresh corn
- 1 small onion, chopped
- 1 dash pepper
- 1⁄4 cup monterey jack cheese, shredded
directions
- Place bacon in a large, deep skillet.
- Cook over medium high heat until evenly brown.
- Drain, reserving 1 tablespoon of drippings, crumble and set aside.
- In the skillet with the bacon drippings, saute the zucchini, corn and onion over medium heat until crisp tender, about 10 to 13 minutes.
- Season with pepper.
- Spoon vegetables into a bowl and sprinkle with cheese and crumbled bacon.

Yum-O! I just finished making this, though I only loosely measured and almost doubled it because I didn't want to have part of a zucchini sitting around in the fridge. I didn't have any jack cheese, or even co-jack cheese in the house, so I used the chipotle cheddar that's just sitting here threatening to go bad, and I cut the spice with a little colby cheese. I also stirred the cheese and bacon right in. I'll definitely be making this again--can't wait til my husband gets home from work to try it!

This was absolutely DELICIOUS!!! I brought it to the table and my husband said, "Did someone eat like a LOT of this before you brought it to the table?" I had to sheepishly admit that it had been me. Definitely a keeper. I mixed the bacon and cheese in with the other ingredients instead of sprinkling them on top. It was yummmeeee!

I'm sorry that I haven't commented sooner. I have already made this dish 3 times for 3 different groups of guests and each time the reviews were WONDERFUL! This dish realy is so easy, and Dancer, you are right, the bacon realy does add that something special to it! I will continue to make this again and again! Thanks for sharing
