Ingredients Nutrition

  • 2 egg yolks, Well Beaten
  • 1 cup corn, Cooked
  • 1 small onion, chopped
  • 2 tablespoons Crisco
  • 1 cup rice, Cooked
  • 34 cup cheddar cheese, grated
  • 12-1 lb bacon
  • salt and pepper

Directions

  1. Saute onion in shortening.
  2. Mix together beaten egg yolks and the corn.
  3. Add the onion to the corn mixture.
  4. Lightly fold in the rice.
  5. Place half of the mixture in a baking dish, add 1/2 the cheese.
  6. Add the salt, pepper, and remaining corn mixture.
  7. Cover this with the remaining cheese.
  8. Lay strips of bacon across the top.
  9. Bake at 400 for 20 minutes or until the bacon is cooked.
