- 2 chicken breasts, small dice
- 4 slices of good bacon, small dice
- 8 ounces mushrooms, chopped
- 1 Jiffy cornbread mix
- 4 ounces of fire roasted chilies
- 1 cup frozen corn kernels
- honey
directions
- Preheat Oven to 350.
- Grease a 9x13 baking pan.
- Cook chicken, bacon and mushrooms together.
- Place chicken, bacon and mushrooms in the bottom of casserole pan.
- Mix Jiffy Mix according to directions.
- Add chilis and corn to the jiffy mix.
- Pour on top the chicken mixture.
- Bake 45 - 60 minutes or until corn bread is completely baked.
- Serve with a drizzle of honey on top.
- Enjoy!
