Corn Cakes With Curry Mayo

"This recipe actually belongs to a friend of mine and I absolutely love it.  These pancakes are very easy to make, loved by adults and kids. Will actually make about 16 large or 32 small cakes"

  • Mix the creamed corn, milk, egg, flour, coriander, salt and pepper in a bowl until well combined.
  • Heat a large frying pan over a medium heat. Add a little oil to grease.
  • Drop 1-2 tablespoons of the corn mixture into the pan and flatten lightly.  Cook for 2 minutes each side or until golden and set. Cook in batches using the remaining mixture and oil to grease.
  • Combine the mayonnaise, curry powder, lemon juice, salt and pepper.
  • Serve corn cakes with the mayonnaise.
