  1. Mix the creamed corn, milk, egg, flour, coriander, salt and pepper in a bowl until well combined.
  2. Heat a large frying pan over a medium heat. Add a little oil to grease.
  3. Drop 1-2 tablespoons of the corn mixture into the pan and flatten lightly.  Cook for 2 minutes each side or until golden and set. Cook in batches using the remaining mixture and oil to grease.
  4. Combine the mayonnaise, curry powder, lemon juice, salt and pepper.
  5. Serve corn cakes with the mayonnaise.
