- 2 (310 g) cans creamed corn
- 3⁄4 cup evaporated milk
- 1 egg, lightly beaten
- 1 cup self raising flour
- 1⁄2 cup coriander, freshly chopped
- 2 -3 tablespoons oil, to grease
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 cup mayonnaise
- 1 teaspoon curry powder
- 1⁄4 teaspoon fresh lemon juice
directions
- Mix the creamed corn, milk, egg, flour, coriander, salt and pepper in a bowl until well combined.
- Heat a large frying pan over a medium heat. Add a little oil to grease.
- Drop 1-2 tablespoons of the corn mixture into the pan and flatten lightly. Cook for 2 minutes each side or until golden and set. Cook in batches using the remaining mixture and oil to grease.
- Combine the mayonnaise, curry powder, lemon juice, salt and pepper.
- Serve corn cakes with the mayonnaise.
