- 1⁄4 lb butter
- 1 cup sour cream
- 1 (15 ounce) can creamed corn
- 1 (15 ounce) can whole kernel corn, with liquid
- 2 eggs
- 1 (8 1/2 ounce) box jiffy mix corn muffin mix
directions
- melt butter in 9x13 backing dish and then allow to cool.
- Stir in sour cream and mix well.
- Add all remaining ingredients except the Jiffy Mix and stir to mix.
- Stir in Jiffy Mix and stir to mix.
- Bake at 350° for 45 minutes or until golden brown. It is better undercooked than overcooked.
- Add chunks of cheese and/or jalapeño slices for variation if desired prior to baking.
