  • 1. Preheat oven to 425 degrees.
  • 2. Place iron skillet or baking dish in oven while preheating with 3 tablespoons of butter.
  • 3. Melt remaining 5 tablespoons of butter in microwave.
  • 4. In a bowl, whisk together the flour, cornmeal, sugar, baking soda, baking powder, and salt.
  • 5. In another bowl whisk together the buttermilk and eggs.
  • 6. Add melted, cooled butter to egg and buttermilk mixture- whisk.
  • 7. Stir the liquid mixture into the dry mixture until just combined.
  • 8. Pour into hot butter skillet or baking dish (8x8).
  • 9. Bake for about 18-22 minutes.
  • 10. Enjoy!
