  1. Heat oven to 400 degrees.
  2. Place crumbled corn bread on a greased baking sheet; bake until crunchy, about 7 minutes.
  3. Whisk together vinegar and mustard.
  4. Whisk in olive oil; set aside.
  5. Place cornbread in large bowl.
  6. Add black beans, bacon, tomatoes, avocados, onion, cucumber and cilantro; toss to combine.
  7. Season with salt and pepper to taste.
  8. Pour reserved dressing over salad ingredients.
  9. Toss completely to coat.
  10. Let stand 5 minutes before serving.
