  • 1 (18 ounce) box cake mix, package (Duncan Hines is the best)
  • 2 tablespoons flour
  • 3 eggs
  • 23 cup milk
  • 13 cup vegetable oil
  • 1 teaspoon baking powder

directions

  • Mix all ingredients together.
  • Spoon into prepared muffin cups.
  • Bake at 375 for approximately 20 minutes or until tops are lightly browned.
  • For ALMOND POPPYSEED MUFFINS: use a white cake mix, add 2 teaspoons poppyseeds, and 1 tsp almond extract.
  • FOR CHOCOLATE MUFFINS: use a chocolate cake mix and stir in 1 1/2 cup chocolate chips.
  • Create your own: use whatever flavor cake mix you want and add your own goodies.
  • Other suggestions:

  • + French vanilla cake mix and fresh raspberries.
  • + Lemon cake mix and poppyseed.
  • + Spice cake mix with cinnamon/sugar topping.

  1. I didn't really think these tasted much like Costco muffins...they were a little more cupcake-y than costco's are...I might try them with a touch more oil to try to get closer. BUT I am definitely going to keep this recipe around for the fact that it's EASY and VERSATILE!
     
  2. My kids really liked these. I added 2 tsp. of vanilla and milk chocolate chips to the batter. Everyone said they tasted more like a cupcake than a muffin. Thanks for an easy recipe.
     
  3. The muffins came out good, but they didn't taste anything like Costco muffins to me. I used a Duncan Heinz Spice Cake mix, and cut up an apple to put in the batter, to simulate Costco's apple-cinnamon muffins. Not even close. Definitely not the best cupcake I've made either, but not bad. I think without the apples, it would have been really dry.
     
  4. What a great recipe!!!!!! I did the chocolate muffins and everyone in my house loved them. I made then into the big muffins so I got 10 large muffins with this recipe. I now want to make some other combos with this recipe. Thanks for posting such an easy and tasty recipe :) I just made some Lemon Blueberry with this recipe and they were the best muffins ever.
     
  5. These muffins were soooo good. I used a chocolate cake mix and added a big handfull of chocolate chips. My kids couldn't get enough of them. They also freeze very well. This one's a keeper.

Tweaks

  1. I made blueberry muffins by using a white cake mix (Betty Crocker w/ pudding in the mix) and adding 1 1/2 cups frozen blueberries to the mix. Instead of mixing the 2 tablespoons of flour into the cake mix, I used it to coat the blueberries to keep them from sinking. Everyone who got one loved it! The only thing I would have liked better is to have a crumb topping. I think Next time I'll try reserving some of the cake mix like another reviewer said they did. I got 12 BIG muffins out of my batch. I could have probably gotten 18 regular sized ones, but I didn't have anymore muffin liners and I hate making muffins without them (not that anyone complained about them being bigger!). I'll be making these for breakfasts/after-school snacks many times.

  3. We have made this recipe many, many times. Always comes out great! Cake mix about 15 oz....no adjustments made. We have added fresh fruit, canned fruit (must drain and sit in frig over night or it will be a mushy muffin), and even added struesal topping. Whenever these get made in our home, they are gone (all 24) within 3 days.
