Cotija Cheese Salsa

"This is an excellent, fresh tasting dip. It is a sort of dry salsa that uses Cotija Mexican cheese. Cacique makes it and it is very easy to find in the southwest. The cheese is a crumbly, salty cheese that is very good. You could make this and eat it with corn tortilla chips or add as a garnish to any Mexican style meal. With out the seeds it is very mild for even a young guest, but can be hotter if you leave in the seeds. Our guests always love it."

I am an accountant turned stay-at-home mom. I have always loved baking. Now that I have a family to cook for I find enjoyment from making good & satisfying meals. I like things that are quick and easy, but would never be daunted by something that took more time. I would never want to sacrifice the flavor. I hate this fast food age we are in. I want to teach my kids the satisfaction of making it yourself and how to cook something that doesn't come out of a box or can. This and other recipe sites have really helped me provide my family with good meals. Anytime I am stale on ideas I just log on. I can search by ingredient (which is great, helps me use what I have) and by category. I love the ingredient search. Often you pull out a cookbook and you are missing ingredients, but when you can search by ingredient... I also love the reviews, it gives you an idea of what others have done to make a recipe their own and how you may change it yourself. I don't know what I would do without this website. Maybe eat at McDonald's more?... :-)~
