  • Melt butter in skillet.
  • Add onions and minced garlic and saute until tender.
  • Add ground chuck and cook until meat is browned.
  • Add tomatoes, tomato paste, salt, pepper, oregano and sugar.
  • Simmer one and one half hours until the meat sauce is thick.
  • Cook lasagna noodles in boiling salted water until they are tender, approx 10 minutes.
  • Rinse in cool water until the noodles are cooled enough to handle.
  • Drain.
  • Lightly grease 13x9" pan.
  • Place a small amount of meat mixture on bottom of pan.
  • Arrange 1/3 of the noodles on top of meat mixture.
  • Cover noodles with 1/3 of meat mixture, 1 cup cottage cheese, and 1/3 each of Cheddar cheese and Parmesan cheese.
  • Repeat layers twice, using remaining 1 cup of cottage cheese on middle layer.
  • Top layer only has meat sauce and cheeses.
  • Bake at 350°F for 30-40 minutes.

  1. This is my preferred lasagna recipe. I like that it doesn't call for sausage. I usually mix a little sour cream in my cottage cheese. It just gives it a richer taste. I also (sometimes) add a layer of swiss cheese, again adding more depth to the taste. Oh, and I add bell pepper to the onions. Thanks for this recipe!
     
  2. Okay, I did some tweaking on this one.... First, gotta have some veggies...so I saute'd diced green pepper with the onions and garlic. I used 1lb of ground turkey instead of beef...I added about 1 generous tsp of basil to the sauce. I added two eggs to the cottage cheese and about 1/2 c. parmesan to the cottage cheese mix. (Next time I might add 1/4 c minced parsley to it) On the top layer I mixed in some Mozzarella with the cheddar cheese on top. This was an outstanding dish that my family loved. It's good enough to serve to guests! Try my additions and see if you like them!
     
  3. Having had cottage cheese to use up, I selected this recipe to try. It was my first attempt at making lasagna and it came out very well. The cheeses were nicely melted, and the noodles weren't rubbery at all. I followed the recipe with the exception of using 99% lean ground turkey instead of ground chuck. (The cottage cheese was 1%). Also, I covered the baking dish in tinfoil before putting it into the oven. The result was a taste which reminded me of a vodka sauce, and I love vodka sauces so this was right up my alley. Will definitely make this again.

I am married and have three children ages 9 to 16. I work full-time so between work and attending as many school functions as I can possibly fit in, I have little time to prepare "gourmet" type dishes which require a lot of preparation time. I like tasty, quick-fix meals that use ingredients that are usually in my house and don't require an extra trip to the store. When I'm not waiting on my family or working, I like to do counted cross-stitch and recently started a new hobby----quilting.
