- 3 large eggs
- 1 cup cottage cheese
- 1⁄8 cup granulated sugar
- 1⁄3 cup all-purpose flour
- 1⁄2 teaspoon baking powder
- 1⁄4 teaspoon ground cinnamon
directions
- Separate eggs. Lightly beat the yolks. In a separate bowl, beat the egg whites until stiff, glossy peaks form.
- Stir together all ingredients except the egg whites. Whisk in one third of the egg whites. With a spatula, gently fold in the remaining egg whites.
- Grease a griddle or skillet with cooking spray or butter. Heat over medium-high heat until a drop of batter sizzles upon contract. Pour about 1/4 c per pancake onto the griddle/skillet. Cook until the surface bubbles and the edges are slightly dry (about 1 minute). Flip and cook until the underside is golden brown (about 3 more minutes).
