- 3 well-beaten eggs
- 1 cup milk
- 1 dash salt
- 3 tablespoons melted butter
- 8 slices white bread
- 4 slices cooked chicken
- 4 slices monterey jack cheese (thick slices)
- 4 slices cheddar cheese (thick slices)
- 1⁄4 cup oil (vegetable is okay)
directions
- In shallow baking dish combine eggs, milk, and salt.
- Butter four slices of bread.
- Top buttered bread with chicken and cheese slices.
- Cover with remaining slices of bread.
- In a skillet (I prefer cast iron) heat oil.
- Dip sandwiches carefully in egg mixture and grill in skillet until both sides are golden brown.
- Serve with a side salad or a light soup.
