Country Bean, Beef and Cabbage Soup

"This is similar to a stuffed cabbage soup, with beans substituting for the rice. I am on the South Beach Diet and this soup can be eaten on Phase I of the plan. It's very tasty and easy to prepare. Even if you are not watching your carb/sugar intake, it's a healthy good for you soup. This recipe originated from The Good Carb Cookbook."

directions

  • Spray inside of a large size dutch oven pot with non stick cooking spray; add ground beef.
  • Cook beef over medium heat until it's crumbly and no longer pink.
  • Add beef broth, tomatoes, onion, thyme, pepper and bay leaf.
  • Bring to a boil over high heat; cover and simmer for about 15 minutes.
  • Add cabbage and beans, turn heat up to high and bring to a boil.
  • Cover and simmer on low heat for 20 minutes.
  • Remove bay leaf and serve.

  1. This is the same recipe I use from Sandra Woodruff's Good Carb Cookbook, except she uses 12 oz. of lean ground beef. I added a chopped clove of garlic and canellini beans instead of red kidney beans, and some boullion granules and extra water because we like our soup to be more liquidy. I've made this simple soup many times and it's always good.
     
  2. this was very good. I didn't have he thyme or bay leaf, so i left them out, used a can of italian diced tomatoes since i couldn't find stewed - used up some purple cabbage from my CSA that otherwise would have gone bad. Simple, easy, and tasty. Thanks for posting
     
  3. Excellent recipe! This is a soup that looks and tastes like you've spent all day preparing it. The only change that I made was to add a can of black eyed peas instead of the kidney beans. Thanks for sharing!
     
  4. Love this soup. When I make it I add chopped up baby carrots (which I pre-cook in the microwave for a few minutes) and a can of Rotel tomatoes to spice it up a bit.
     
  5. simple, easy, fun (for some reason I love chopping cabbage), and good! I added celery and garlic, and spiced it up some more with cumin, chili powder, and salt.

Welcome! I joined this website in 2001, as a new wife and Mom of a 1 y/o and I was 28 yrs old and did not know about cooking. I found this website cause I searched the web and wanted to find a good recipe for carrots! I found that recipe and so much more here over the years. I learned so much from this website and opened up my eyes to other recipes. I now am 46 y/o. I am now divorced and my then 1 y/o son is now a Marine. I have a wonderful man in my life that loves and appreciates my cooking and I thank this site for all of its help. I still come here for recipes.
