Country Chicken Spaghetti

  • Cut chicken breast into 1 inch pieces and sprinkle with salt. Dredge in flour. Brown chicken pieces in melted butter in a dutch oven. Remove and set aside.
  • In same saucepan, saute onion, celery and garlic. Add chicken pieces, carrots, sliced squash, tomato sauce, diced tomatoes, sugar and 1 1/2 cups of water.
  • Cover and simmer on low heat for 30 to 40 minutes. In another saucepan boil spaghetti noodles in salted water until done. Drain.
  • Serve chicken and vegetable mixture over spaghetti noodles. Serve with crusty bread.
  • Enjoy!

  1. DELICIOUS is right - made for a wonderful Pasta supper! Love chicken and pasta. Dredging the one inch pieces of chicken with flour and browning really adds flavor to this dish as do the vegetables. We all love Chicken Spaghetti - chicken chunks and the veggies make for another recipe that will be added to my cookbook. So looking forward to serving this to family and friends. The teenager who is not all that fond of tomato based sauces was convinced to give it a try - not only did you get his vote, he said it needs more than five stars! Thank you Seasoned Cook.
     
  2. Very tasty combination of chicken and vegs plus pasta. I did use more garlic and added black pepper as well, but otherwise made by recipe. DH liked it and wants to have again. UPDATE: Froze the leftovers and just ate them for supper about 5 weeks later. I just thawed and then warmed in a pot on the stovetop. Even better than the first time. Thanks for posting.
