- 3 cups grated squash (yellow or zucchini)
- 1 onion, chopped
- 1⁄4 cup vegetable oil
- 1⁄2 teaspoon oregano
- 1 cup Bisquick baking mix
- 4 eggs, beaten
- 1⁄2 cup parmesan cheese
- salt and pepper (to taste)
directions
- Heat oven to 325*F. Allow grated squash to drain in a colander for a few minutes. In a mixing bowl, combine all ingredients and pour into greased 8x8-inch casserole dish.
- Bake at 325* for 40 to 45 minutes. Serves 4 to 6.
