Country Sausage Mac Casserole

  • Preheat oven to 350°.
  • In medium skillet, crumble and cook the sausage; drain on paper towels.
  • In medium saucepan, combine milk, cheese and mustard; cook and stir over low heat until the cheese melts and the mixture is smooth.
  • Stir in sausage, tomatoes,mushrooms, onions and cayenne pepper; remove from heat.
  • Cook elbow macaroni and drain.
  • In large bowl, combine macaroni and the cheese mixture;gently toss until well coated.
  • Spoon into greased 2-quart casserole dish.
  • Cover and bake 15-18 minutes.
  • Remove from oven, sprinkle with Parmesan cheese; return to oven, uncovered, for 5 minutes more.
  • Let stand 10 minutes before serving.

  1. This was a good, hearty casserole. We enjoyed all the different veggies in this and it was also quite easy to prepare and was very economical. My family loves cheesey macaroni casseroles and all of the ingredients appealed to us. Unfortunately, I really didn't enjoy the flavor of the sauce as much as I'd expected. The taste of the Dijon mustard was a bit overpowering - I think next time I would reduce the amount to just a few Tablespoonfuls, rather than the whole 1/2 cup called for. Also, the cook time indicates only 25 minutes, but this is only taking into account the baking of the casserole. Browning the meat, cooking the pasta,and cooking the sauce took an additional 25-30 minutes. UPDATE: The recipe has been edited to correct the amount of mustard since this review was first written.
     
  2. This is comfort food at its best and so easy to make. I served this with a garden salad and the meal was complete. Quick, easy and very tasty! :-)
     
  3. Yummy! Perfect dish for my young toddler. I actually made the recipe smaller because I didn't have enough onion, tomato, ,and cheese for a large batch. I added a lot more cayenne pepper to the dish. Also, the Dijon mustard/cheese mix is different, and I really liked it! I like food with a little kick to it,(so does my daughter!) so I am excited to try it when it comes out of the oven. I was taste testing while making it, and it seemed all good:) Thanks a ton! <br/><br/>To prep and cook everything it took me 30 minutes. I always seem to find short-cuts in recipe directions! First, you can cook the pasta right away in a small pot and let it cool. Then use that same pot for the sauce! The sauce and meat mixture is cooking at the same time, and it does save you a lot of time as well! Before starting any recipe....think about the steps of the recipe in your head first, and usually you'll find shortcuts. It seems to me that most recipes are written for someone who has never multitask-ed in the kitchen before!

I am in Northeastern Ohio. Have lived here my entire life. I am retired. I was raised at my Grandmother's side, with an apron and wooden spoon, as my small chef's wardrobe! We spent many happy times, in her kitchen baking and cooking up memories! My love of the culinary arts has never waned. It seems I still cook and bake, as if I were feeding everyone at Grandma's Boarding House! (although my neighbors are happy about the "goodies" I am constantly sending their way!) I must learn to cook for two... My kitchen is in my Cape Cod Style home and done in a French Country style, with french blue and pale yellow, accented with white.
