  • Peel the courgettes and chop roughly.
  • Place courgettes in a saucepan and cover with vegetable stock.
  • Bring to the boil then simmer until courgettes are soft.
  • Blend until soup is smooth, then add the cheese triangles and blend again.
  • Simmer for another few minutes.
  • Season to taste.

  1. Easy, fast, impressive, and delicious. I will serve this to company as a first course, and look like I had slaved all day. We had this just now for lunch. Thanks for sharing this. Well, we had this again tonight for dinner. This time I did not peel the zuchinni, thus, a much greener soup with tiny flecks of green. This soup is so tasty that I decided to freeze a quart for a special occasion this winter. We have not had too many zuchinni this year. Between this and Michael's grilled Zuchinni, we barely have enough. I cannot say how much we love this soup! We've had it both hot and cold. Made for Spring 2007 PAC.

  3. Oh my!! This was sooooo good!! I will be making ths OFTEN!! It is so good and filling. The fact that it uses few ingredients and it's fast and simple....LOVE LOVE LOVE IT!!

  5. Wow! I cannot say enough good things about this recipe!! My husband and I have nicknamed this "Wide Open Soup". It is outstanding just by itself -- the original recipe -- but would also be fantastic in so many other adaptations. I started by sweating a small yellow onion (diced) and 2 small minced garlic cloves in 1/2 Tbsp of butter and a splash of olive oil (Just enough to coat everything so it doesn't burn). Added the courgettes, and used Emeril's boxed Veggie Stock. I think I used 5 or 6 courgettes, one box of stock, and 8 pieces of Light Swiss Laughing Cow cheese. This soup is creamy, rich, and SO flavorful! Whether dieting or not, this is a MUST MAKE! It is similar in flavor and texture to potato soup. With the addition of some corn and shredded chicken, would make an awesome chowder. I added a tiny dollop of sour cream and some chopped scallions and it was divine! This would even be good as a sauce for fish. Heck, my husband put it on his mashed potatoes as a gravy he liked it so much! :D
