  • Heat the oil in a frying pan. Add the onion, garlic, and dried oregano. Fry until onion is translucent, 3-4minutes.
  • Cut a cross into the base of each tomato, place into a heatproof bowl and cover with boiling water for 3 minutes. Lift out and place into a bowl of cold water. The skins will have begun to peel back from the crosses. Remove the skins, cut into halves, and remove the seeds. Chop the flesh into strips.
  • Top and tail the zucchini and cut lengthwise into strips. Slice the strips into matchsticks.
  • Stir the zucchini into the onions and fry for about 10minutes, stirring occasionally, until just tender. Add the tomatoes and jalepenos and continue cooking for 2-3minutes.
  • Add the cream cheese and reduce the heat to the lowest setting. Gently stir to coat. Season with salt and pepper. Garnish with fresh oregano.
  • If serving as a main dish, a nice rustic bread makes a good accompaniment.
