Couscous and Cucumber Salad With Buttermilk- Dill Dressing

"I find both cucumbers and fresh dill to be especially refreshing when it's hot outside, so I think this light-tasting dish makes a great side during the heat of summer. Adapted from Cooking Light."

  • In a medium saucepan, bring water to a boil and gradually stir in couscous.
  • Remove from heat, cover and let stand 5 minutes; fluff with a fork, cool.
  • Combine buttermilk, and next 6 ingredients in a large bowl; stir well with a whisk.
  • Add couscous, bell pepper, onions, and cucumbers; toss gently.

  1. Nice, light and different, like a cucumber sour cream salad with couscous added to it. I used chicken stock for making the couscous and it did add the needed savouriness. Very nice accompaniment for seafood.
     
  2. Pleasantly light and cool, but nothing to write home about. I agree with NovaM that it needs more salt and more something else. It's a bit bland as is, and I'm unlikely to make it again.

  4. A very easy and tasty salad to put together - I did need to add a little more salt, though. I think if I was to make this again, I might add some feta for a bit of extra flavour.
