- 1 1⁄2 tablespoons margarine, plus
- 1 1⁄2 teaspoons margarine
- 3 cups chopped onions
- 8 large granny smith apples, cored and chopped
- 2 ripe bananas, chopped
- 5 garlic cloves, minced
- 4 tablespoons curry paste
- white wine
- 1 teaspoon turmeric
- 2 cups clear broth
- 1⁄2 teaspoon salt
- 3⁄4 teaspoon pepper
- 2 cups couscous
directions
- brown couscous in 1/4cup oil, in another pan.melt 1 teaspoon margarine, over medium heat, and saute onion,after 10 minutes add remaining mrgarine,apple,garlic, and banana,stir often 5 minutes until tender, stir in curry and wine,cook 2 more minutes,add broth,salt and pepper. cook 2 to 3 minutes,stir in couscous,stir,fluf it up,let set 3 minutes,taste.
