  1. Bring 1 tablespoon oil, onion, broth, and couscous to a boil over high heat. Cover with a lid and turn heat to low. Simmer for 20 minutes or until couscous is tender. Remove from heat and let stand for 10 minutes.
  2. Mix together remaining ingredients in large bowl. Stir in cooked couscous.
  3. Serve hot or chilled.
