Couscous Salad With Lime-Spinach Dressing

"This was created for Gone Fishing's 50th birthday celebration. It was so much fun cooking in her kitchen with 8 others, drinking champagne and tapping our feet to great tunes! This salad is perfect with fajitas and margaritas. To make this vegan or vegetarian use vegetable broth."

  1. Yummy salad! It would be great to take to a potluck. I loved all the lime and the bite of the garlic, and definitely used all of the dressing. I also liked the microwave method for the couscous, that was new for me. The cilantro was missing from the ingredients and I didn't see it in the instructions until I was making dinner, so I used parsley.
